You can update and change to your hearts content after the rating period. The limit is simply there to show all raters the same game, but after that you can completely change it. Swap the whole code and even replace the game entirely if you want.
You should consider keeping the jam version as a separate download though if you want. Always fascinating to compare the jam version to an unrestricted one ;)
