I´d say ... it depends on your skills, goals and ambition ...
As a beginner it would be better to roll out a bunch of smaller projects ... to hone your skills ... to try out different genres and platforms/engines ... and to boost popularity ...
Once you have the experience and found your way ... you can start a more complex/bigger project and focus on the genre/engine that suits you best ...
I worked on a game for five years and never published it. Now I do a small game once a year for friends and family for Christmas. This way I gain experience on the complete process and build up a library of my own assets. I don't make any money with my games. I guess if you want to make money you would need to invest in marketing and your game should better be good. Which your first game - honestly most likely - isn't.
Personally I am working on one big game, Not one that's mechanically advanced, but story rich.On the other hand, in my off time, I like to work on the plot and lore of another game/VN I might want to work on in the future
On top of that, If I am bored, I study the game platforms that I want to put said games.
