I usually get the plot planned first. I design characters, write their personalities, events of the story, etc. Then, I keep whichever dialogue ideas I have along the way and improvise the actual coding/dialogue/execution of that plot for the first version of the game, adding art, audio, etc as I go if needed, using whatever I kept note of as a guide. If a project is longer, I'll release it in development and then polish it with feedback from people I know (comments would also work but I personally don't have them on my page), and over time use a document to have a list of updates to do. Once I am complete the updates, that story is finally complete.
You're looking through the point of view of Kevin, just an ordinary guy, maybe even a loser. You made an idol lose her job, you have the worst luck in your city, and you HATE the idea of ever signing a job application yourself.. But you always admired the stage- so maybe it'll be worth having a career in the end. This game was made in less than a week for a jam, and is supposed to be "so bad it's good" (I made this while kinda tired after finishing a bigger project lol). There ARE some potentially intense moments (pipe bomb explodes, Kevin gets roasted for fearing getting a job, etc) but it's all references to memes to make it go further into the "strange game" sorta thing lol. Nothing here truly has hurtful intentions. All representation is intended to be respectful when there (NO MOCKING TOPICS IRL, JUST VN TROPES AND MEMES), just any potentially in-depth topics will not be in depth due to the game itself lacking a plot lol.

As a visual novel developer, I use Ren'Py. Free, simple modified Python to code in, and actually fun to use. It comes with a GUI which can be modified and folders to keep the files (images, GUI, audio, etc). Ren'Py is specifically designed to create visual novels, so it's capabilities are great for VNs and more limited for other genres.
⚠While those who tested this game said it's not quite "adult," it may still make some players uncomfortable. Please read description on game page before playing. Recommended for ages 16+. This game is currently incomplete and in early access. ⚠

secrets of the hopspital is a free horror visual novel that can also be played in the browser. Your name is Periwinkle, and you like music, but faint at a concert unexpectedly. And fall into... a black hole?? Or something else completely?? Either way, through the rabbit-hole you find yourself in a hospital far away from home... and have to survive the horrors that lie in this strange place. This game also is loosely based on some personal experiences with medical issues and autism (both of which I have), and my experiences with identity and accepting myself in a world that's confused by the ways I think and feel. The main character is also xenic, and there is more nonbinary representation too. There is also a dog therian!
So if you like parallel universes, bunnies, representation I've personally never seem much, and a monster trying to drown this world of rabbits into darkness all wrapped up into a hospital-shaped box, I recommend this new (though unfinished) project!
Oh yeah, there's also 7 endings, and eventually an 8th when it's finished!
If you are interested in the game, feel free to play! If not, that's alright, I'm aware my game won't be fun to everyone. But if you do decide to play the game, I hope you enjoy it!
(note: if this game for any reason is actually considered adult, I will remove this post and mark the game as adult as soon as I can. However, the test players said the game is probably not quite adult, which is why I've decided it's okay to share it here.
