I took a look at the FAQ and didn't see the answer...

Are the game assets sold under some common license? If so, what would that license be? I can't seem to find an obvious location for the license type in the page for the assets themselves. More information doesn't appear to have it.

You're looking in the right place. It should be under More Information, or failing that in the asset pack's description. Some creators simply forget to write it down. Just ask them! It's their choice, Itch.io doesn't impose any restriction.

I personally upload the EULA as a separate (demo, so people don't need to buy the asset to figure out if they can use it as desired or not) file just to make everything as clear and legally stringent as possible complimenting the dropdown menus in "metadata", but it feels more like a crutch than a perfect solution. Usually it's better to be safe than sorry when it comes to licenses - if there's no license information around, it means that you don't know what the license is, not that you're free to do whatever you want with it.

Kind of wish this was a mandatory field for assets. Seems like a necessary to know if you ever want to really make use of the assets. 

If a no license specified is whatever the creator wishes to put on it at any time, then what is to stop them putting whatever constraints they feel like at any point. Hell they could even claim that the asset can't be used in projects at all. Then I just paid them for no particular purpose.
