The win condition is to have an average temperature above 163 degrees. You have to play near perfect to get it (microwaves are pretty unreliable IMO) It is not articulated well in the game so I understand the confusion!
If you want to understand the math behind it, the score for each layer is calculated as 165- error. Error is calculated in time and for each beat there is a forgiveness of 100ms.
