Did you pick a directory that is outside of /home/<current_user> maybe? “operation not permitted” suggests you don’t have enough permissions to do what you are trying to do, and Itch is trying to put the game in that directory and it fails.

If that’s the case, I would suggest to move the installation directory to one where you have permissions to do write into. Most likely something like /home/<current_user>/mygames/
