you can but that means you have to jailbreak your ipad and this can lead to Apple rejecting any repair or service. Some games do have their games on the apple store but it is very rare.

Generally speaking, it’s not possible. The downloadable games we have here are typically for Windows, macOS, or Linux PCs. We also have a wide range of HTML5 games that you can play in your browser as well.

If a game is available for iOS then it would typically have an App Store link on the project page. But installing directly from itch.io isn’t something that developers really do, because Apple devices are heavily restricted in that way.
