I linked the paypal on sellers acount menu, but the message "You don't have payment configured If you set a minimum price above 0 no one will be able to download your project" continue to appear. I go to edit menu, and only have to options on the "payments": "credit card" and "billing adress", but neither seens to be the correct one.

My mistake, I misread your message.
Normally, you would first define the payment method at:
https://itch.io/user/settings/seller
If you use "collect by Itch" you should be able to start receiving donations without anything additional, but in order to claim the money, you must first fill out the tax interview and link your paypal or payoneer account from the dashboard.
If you use "Direct To you", you must first configure the paypal and/or stripe account in Payment processors.
