So I don't know if you ended up finding a team, but if you haven't, I would highly encourage you to start your project anyway. Keep learning the skills you need as you go along. The more skills you can bring to the table, the more easily you can attract other skilled people. Plus you will have a better idea of how to design good games when you know what's involved in creating them. Also doing something is always better than sitting around and waiting for other people. At my age, it's literally the difference between people who get old with nothing but regrets vs. people who are living their best life.
