Este paso lo debes hacer tú, de forma manual, no lo puedes automatizar.

Si la primera vez que vas a solicitar el cobro, puede tomar sin problemas 3 semanas o más.
Es así de simple, solicitas el pago y este te llegará a la cuenta que de paypal o de payoneer que tengas enlazada.

Sobre los impuestos, esto es muy complejo, itch debe responder ante USA, por eso, si o si, debe pagar los impuestos de USA, si el pais donde resides, tiene un convenio con USA, entonces te devolveran esos impuestos, si no lo tiene, no podrás recuperarlos.
No hay mucho más que puedas hacer, o dejas que itch gestione el tema de impuestos (y los pierdas, dependiendo del pais que residas) o asumes el costo de crear una empresa, solicitar un ETIN en USA y gestionar el tema contable de vender por tu cuenta.
