How do I make sure others can't copy or steal my game?

I'm thinking of uploading my first major project as a demo to itch.io but I was wondering what is stopping people from redistributing my game and saying they own it? I'm not known at all so it would be very easy to do that. Do I have some sort of protection from that? How do I set it up?

You can't. DRM doesn't work. Some people here use the API to make sure that whoever started the game is logged into itch.io and has bought the game, but I dunno how it's done, and it can't stop a determined cracker.

So should I just upload my game and hope for the best?

Most games ever do just fine without DRM.
