Yeah I setup the enemies in different mobs when it is significant. But I would not for like a mix of goblins with swords and spears since the game do not differentiate weapons. But for the bows yeah I could make them their own mob. 

As for the mobs targeting, since Tunnel Goons is players facing, monsters don't trigger attack themselves, they inflict damage when characters misses, so you simply describe the melee. :)

Interesting. Maybe I fundamentally misunderstood Tunnel Goons a bit since I thought that monsters still got a turn (the results of which were adjudicated the same way - by players making a 'save' against the relevant stat). I was always a bit shakey on how it worked. 

You could also play it like this I think. I was reading Macchiato Monsters before reading Tunnel Goons so maybe it is my reader bias.
