Wow this is incredible, it reverts your expectations and it gets so frustrating it's really cheeky. Incredible job! Reminds of I Wanna Be the Guy, another insanely frustrating game gahh.

And yes you hit the nails on the head with my design intentions, I really wanted something that seems normal at first but slowly starts to get on your nerves with its annoying quirks.

I think there could be something like a little jump-timer, allowing the player to still jump when the player is already falling
