I've never been too fond of neither flight sims nor roguelites, but Sky Rogue breaks this rule for me. The fact that the single player "campaign" levels are procedurally generated really doesn't matter at all - the air combat mechanics manage to make every encounter different and equally tight. Also, being able to switch between arcade and simulator controls is pretty nice for those not too familiar with the genre. And the music and visuals are just great, kind of a Star-Fox vibe overall. So yeah, highly recommended.
