I would like to know if i understood well how collected by itch.io mode works. So this is what i  realized:

-A buyer buy my game

-Money goes to the site itch.io as if it's it to sell the game

-Itch.io makes all financial stuff on the money based on my tax interview

-After some time i can get it from a payout to my PayPal account

Is it right? I'm a begginner in selling things. How are my country taxes or laws applied to this? (I live in Europe) From what i understand i have only to recieve money , right?

That's right, except you may still have to pay income tax in your country of residence, depending on local laws and how much you make. Ask an accountant how and when to declare your income, to make sure. Itch.io can't handle that part.
