I published a payed game around 7 hours ago and I still can't see it if I search for it or on the fresh games area. Is this normal ?

Also I triple checked all the options to make sure I didn't accidentally turn the wrong thing on

Yes, it's normal. Paid games have to be seen by an admin, which normally happens in 24-36h. If the problem persists, look through this checklist.

Well, now I can find it if I search for it but still can't see it in fresh

It's been a day since release and me and my friend kept a tight watch over the fresh section and never saw my game. Saddening 

2 days and still nothing. 

Maybe it flashed by when you weren't looking. Lots of games get published to Itch.io all the time, and sadly that has a downside: any given game is likely to get buried by newer releases very soon. Post devlogs, and advertise outside of Itch, it should bounce back at least somewhat. Add a short description, too, it counts in searches. And double-check your tags.
