How do I use 3d Assets in a 2d Platformer in Godot?

This is my first time making a game, and I'm looking to make a platformer with 3d assets for the player and opponents. I got the idea from looking at games like Child of Light and Never Alone. I'm using Godot and Blender, and I am feeling way in over my head. What research I've done pointed me in the direction of viewport sprites, but that seems like something you use to bring 2d assets into a 3d game. Anyone out there know how to do this?
