We'll be launching our game next week and for Steam we're offering a 10% launch discount. We've pretty much finalized our store page here on Itch, but I can't seem to figure out how to do something similar? I see the option for a sale, but it seems the game has to be available to purchase first. Is there any way to set up a discount before hand?  New to itch and just want to make sure everything is being done correctly :)

No, but once you launch your game here, you can immediately create the discount -  there's an option to start a discount from NOW until when you want it to end.
