My apologies if this is mentioned elsewhere or in the documentation. I absolutely love this project. How does one delete cards?

To remove a card from the deck, use Card -> Cut Card.
I know it might be slightly more intuitive to have a "Delete Card" option, but this approach gives immediate recourse if you choose it by accident; you can always paste the card you just cut.
