Why do sales make no sense?

If I buy a 10$ game that's holding a 50% off sale, why do I suddenly lose access to the $10 version when it gets updated?

When you buy a game, you have access to all files of the game that do not have a custom price set. This means if later on the game decides to increase its price, you will still have access to all of these files.

When you say “$10 version”, I assume that’s a file that has a custom price of $10, instead of the price of the project itself. Files with custom price work in a Tier system, so if you spend $5, you will have access to all files of that project with a custom price of $5 or less.

Hope that helps

The game in question was having a 50% off sale and I acquired the 10$ tier, but when they updated the version I no longer had access to it.

That’s not how it should work. You can try to contact the developer of that project, to confirm there’s nothing you are missing on this process.

As a last resort, you can Contact Support and explain your problem in detail. They can give you more details.
