Did you download the latest version? There was an issue that would make the player go to sleep instantly after a nightime scene, now it should be resolved
The save will be the same between versions, ideally you shouldn't switch to an older version or there will be potentially issues, in this case there won't be since the new update doesn't introduce anything new in the savefile but for future instances just play on the newest stable version.
Oh crap, I now understand what's happening, basically when you press space to go forward you can accidentally go to sleep again, since you have less stamina when waking up.
Regarding who of them should appear during the night, they have a pool of chance that depends on how much time you have ignored each girl, technically if roxy appears the other girls will have a higher counter and they should appear instead, but if you get "unlucky" she will appear. I will chance the day threesolds in the upcoming patches, depending on how players react to it.

I don't think I understand what you meant by "I think it should instead sap 240 and leave only 10 if the player has reached that amount of energy", only one scene gets triggered by night and they should consume the same stamina each time (?) The chilli will get reworked in 0.7, while Clara and Alma will get their scenes pretty soon, as well as a rework with the love potions and milk. Glad you liked Roxy!
It's already on steam on the beta branch (right click on the game on your library -> Properties -> Version), I will add it soon on the main branch as well, I just want to make sure there isn't any weird bug before
Sorry for late answer, thought I answered but I didn't. Snake mechant will get some love in 0.7 probably, as well with a rework of how chilli works and something else to purchase as well. End goal is to finish the story, develop 8 matrons total (bee biome and mouse biome will come next) as well as a couple of other characters/biomes, and make the world feel as alive as possible within the boundaries of what I've built in so far. The nightime scenes I've recently added go into that direction, and I want to add more stuff like that to make matrons feel more responsive to the way the player behaves.
Right click on the game -> Properties -> Game versions and beta -> Select beta It will come on the main branch in a couple of days, but if you're in a hurry you can already test it out on the beta branch.

Managing your resources is kind of the point, in any case, if you have problems with energy consumption you can buy milk once a week from the cowgirl merchant.

I've already answered about the first question in another post. I'm sorry about what happened to you but that's not a normal behaviour from normal professional developers. I don't know who that developer is, but they have scammed you. I will never ask people to buy the game more than once.
In any case, all matrons for now are planned to have at least 3 scenes each (and the latest demo currently has 4 scenes), also, you can see the planned species of monster girls in the roadmap post. Other side characters will have scenes as well but I'm still not sure about the number.

- Buying on itch comes with a Steam key - The game is in early access and there's 3 major updates planned, if you play at a normal pace you can finish the current content in about 2-3 hours, if you want to complete all the upgrades you can finish the game in 8-10 hours
