Each emoji represents a word, and each type of punctuation marks a specific kind of change from one word to the next. On the first page, pipes (these guys --> |) are a change of 1 letter, like word ladders. I'll leave the rest for you to figure out :)

This was really fun! It helped a lot that I was familiar with long anagram chains like (rot13) YRNFG YRNGF FNYRG FYNGR FGNYR FGRNY FGRYN GNRYF GNYRF GRNYF GRFYN for sure.
