For lore reasons it' very hard to transform into a demon, requiring divine intervention. I believe you can get that form using the patreon-build cheat/debug form, however.

You select an operator when you look at a mission, if any are available. It's definitely a late game thing as you need a well-rounded employee to operate the truck as it's a sort of clinic on wheels.
I confess I forgot how to do that when I returned for playtesting the other day after so many years away from the game. If I have the health and time for it that'll likely be something I look into changing.
Thanks! A lot of players do want that but given that every step has to be its own standalone form with abilities and stats and all, and also that transformations can go from almost any one form to any other, it wasn't feasible for this project compared to something like Exile with its linear once-per-campaign transformations.
There is a separate project for the developer/debug patreon perk builds: https://bluefairymediagames.itch.io/patreon-the-restoration-of-aphrodisia
I only began playing The Elder Scrolls at the original Oblivion so I'm not too familiar with that. Best case is an isometric view where you can designate plots where certain buildings go and they give bonuses to adjacent buildings, can be upgraded over time, etc. Obviously not a full fledged city builder, but hopefully a little more satisfying (and less annoying) than settlement systems in Spore, Fallout 4, Assassin's Creed 2 (kinda),
Really it all depends how much time I have for development, and seeing as Steam is rejecting this title going into Early Access due to mature content, I may need to trim things down to get it to a "1.0" state sooner.
Perhaps you could build a tavern to recruit new followers and offer a more long-term "storage" plan, but Followers aren't meant to be Pokemon--can't collect them all!
The male genitalia, female genitalia, and and breasts were made as form traits so that they could one day be chosen independently from one another. The plan was to allow a potion that would allow the player to customize these aspects, at least when in their base form. This wouldn't have any mechanical difference to gameplay, and these changes would likely be contradicted by a number of transformation text passages, so ultimately it would just be a personal roleplay mechanic more than anything else and hasn't been prioritized.
We do have a Discord server already: https://discord.gg/ZwKH4Vt
1. There's no wiki (aside from a mostly-internal one used to track Aphrodisia world lore), but our Discord server has a quest-help channel for such questions.
2. Nope, you can migrate older save game versions back from the very earliest release. We try our best to make it so you are not forced to start over from scratch given how long the campaign is, though you may miss out on some minor content added in later. If there is ever a need to restart a campaign entirely, we'll be sure to announce it.
Part of the ongoing main story is to regather the scattered remnants of humanity back together, so building a town for humans to return to and start to repopulate in safety is a feature we're likely to start work on within the next few weeks. The WIP quest Friends in Far Away Places is when you first start this process.
