Sorry for the late reply, but I did reach out to itch.io's support, but they are very slow and it's still ongoing.
I have been making good use of the GUI assets in the mean time however.

I am sorry to hear that, have you tried to look at your library in your account? Perhaps all the product that you had purchased might appear there.
The packs are in my library, but only the example games, not the actual asset packs themselves.
Ok how about you send me a message on my Twitter and then I can send you the assets, is it fine?
That's nice of you, but I don't have twitter, do you have an email address instead (even a temporary one)?
