That's a very solid base idea for a greater game!
It can go towards creating the perfect hybrid to fight another one in a duel, or creating an animal that us best fit to survive some special environments.
As already suggested, it would be nice to feed the animals until they are ready to breed: that would give some extra tactics on how to spend the money earned by selling and it would avoid the instantaneous creation of new animals.
