Hmm, I guess I could duplicate the page. That way, I would keep a copy of the old page as it is now, and on the duplicate, I could only have the old version of the game (+ change the price to $0 or donate) with all the old screenshots and stuff if that's any help :3 And then I can just upload the new stuff on the current main page.

If you like, one way to possibly do things is to have a 'partial'/trial old version (maybe stopping at a certain point) be your free demo/trial with the revamped/main version being the paid one. There are many paid games on itch that do the same thing on the same page.
