Toning down the AI is definitely fair; sounds like a good executive decision overall then. I fear the difficulty might have been a bit overcorrected, but that's neither here nor there.
Sorry to hear about the difficulties during development -- I'm glad you and your team managed to pull together something playable in the end! Jams are huge commitments for sure, and it sounds like you all got some good experience from it nonetheless.
The base building idea sounds like a really fun limitation mechanic paired with the volleyball gameplay! I'm sorry it never ended up making it in. I think you guys should definitely be proud of what you got done and getting it out in time for the jam -- and who knows, maybe you will end up taking this further.
