I figured out the "turning the light off" mechanic, and a "ride the box" technique, but I feel like there's other major mechanics/techniques that I haven't found yet! Any help, please? 

Level 3 (Snow): I have 6/7, but can't get
- The Wall

Level 4 (Catching): I have 4/7. I solved Trapped, Stay, Position, and Gap, but can't get:
- Offset
- Crossing
- Setup

Level 5 (Corners): I have 3/3! 

Level 6 (Layers): I have 6/7. I got Across, Flight, Fragile, Canyon, Escape, and Slot, but can't get:
- Transfer

I gave up at Level 7 (Variety). 

Fantastic game! I'm looking forward to enjoying the solutions once I get unstuck and make progress, and seeing the rest of the game.

It doesn’t sound like you missed any important techniques from the earlier sets. Are there any specific levels in Variety that you’d like hints for? I also want to note that the layout for that set is a bit odd, I think a lot of the easier puzzles ended up in the row above the start position.

id like a hint on the wall, everything else ive had no trouble beating but im stuck on that on

That’s a tough one to give hints for, I think the best method for solving it is to consider what constraints you have (noting that these constraints aren’t always true but work here due to the simple geometry of the puzzle). This should significantly reduce your options.

Constraint 1 Pushing snow to the right will result in your light being directly to your left when the move is complete. This means that when you push a snow block, any block that was directly above or below it before the move will be destroyed when the move ends.
Constraint 2 Trying to push a snow block vertically requires two rows of space above/below it. Otherwise, trying to get in position to push the block will move your light directly diagonal to the block, destroying it. This means there is no way to move snow between the top and bottom halves of the puzzle; you can only push snow into the top or bottom row, which is not very helpful.
Implications Consider just the bottom two rows. Each row has 4 blocks of snow that need to travel at least 5 tiles to reach a button. From constraint 2, we know there is no way to bring new snow into these two rows. From constraint 1, we know that each push to the right will consume any vertically adjacent snow. 10 pushes are required to get snow to each button, but we only have 8 available - we need to find a way to split up the rows or we will always run out of resources.

from what i can tell, offset seems mechanically impossible unless theres a trick we're meant to learn from levels past variety

It shouldn’t rely on anything that you haven’t been exposed to by that point, though there are a lot of potential sticking points. Is there a specific part you’re stuck on?

well it seems that theres 2 potential solutions, both of which require lowering the red block 

1. somehow lure the left and right moths in 1 and 2 block increments, which im not sure is even a mechanic as any 1 turn movements that both expose and hide the light (in that order) don't seem to lure them

2.  manage to lure the moths while blocking the web squares, which would need either a way to escape webs or somehow unmelt the ice.  i havent found a method to do either (tried melting blocks on the webs to no avail)

nevermind i realized what i was doing wrong, assuming the block lowering had to stay in effect after a turn instead of being able to lure all 3 moths in one move

Thank you for this confirmation! I've started getting through some of the Variety levels; and now I know that there's nothing major that I'm missing or don't know yet (e.g., I shared Helperchamp's impression that Offset was impossible unless there's some mechanism we missed). 

Again, fantastic work on the level design, they really explore the possibilities and limits of the mechanism.
