Eeyok's route is not in the original line-up at the introduction (only the 6 main guys are). But once you select a random guy, go to the main menu, click on the cogwheel icon, and then click Character, you should see Eeyok listed there :) you can then click on him, and click on 'start new route' to begin his route.
