I feel like I'm not getting items consistently and I think it has to do with me trying to understand the chance an item drops from a node, by 1-in-100 chance does it mean its a percentage and if I have multiple items drop from a node its has be divided (like 50%/50% for example) or is it more like a weighted system like how RPG Maker MZ handled random enemy encounters?
Also I get the sfx saying the node harvest was successful but doesn't produce any items? Am I setting it up wrong?

Hi, I am glad you got it working. From reading your comments, I think you might be confused on growth states... the gathering node is harvestable when it is in a growth stage with its "mature" flag set to true. You can also turn its growth stage "expired" flag to true, which controls which items are received when harvested.
This is meant to emulate a crop that is harvestable when fully grown and after it dies, for example if you wanted a Berry Bush gathering node to give Berries when the bush is fully grown and healthy, but if the player waits too long and the bush dies (and changes to a growth stage that is set to expired) they could instead get Moldy Berry or some other waste product.
