If you're fine with modded C:U, you could try QoL:Unknown (https://itch.io/post/15369846) as it has both the aforementioned features :)
If not, you can type `timescale 0` into the console to pause, or simply alt + tab to another application.
There is no base game feature to save mid-run whilst keeping progress though, you'll need the mod for that
