Is there any way to restart the loop from there so I can try and get the rest of the achievements?

I think if you beat the "Demo Lord", the game will just let you walk around doing achievements or whatever.
Right now, two of the achievements require you to dig up a 0.6% rare mandrake and you can only do it 10 times per run. So you'll probably have to start from the beginning anyways.
But don't worry, there will be "proper", less rng ways to get those achievements in the future.
