Yes, you should be able to (probably minus some clothing, since the tops don't really map well over a model with no breasts - that will probably be fixed in time though), especially with the latest version that adds new body types. You can play any way you want, there are some predefined characters, but you can either edit or delete them, and you always get to pick your opponent.
