Are we allowed to use our own assets (e.g. art, music) that were made prior to the jam?

Yep! I've updated the rules to make that clear:  

• You can create or use your own assets or use existing, openly licensed assets (e.g., Creative Commons)."

Also if you license your own assets that you use under Creative Commons you'll get extra Open Source Karma points at the end.
