Great story, well integrated interactive elements, well-balanced duration (I don't think adding more customers/ingredients would improve anything).
As usual I see a lot of potential in this concept. Similar tea-brewing minigame has been done in second Prof. Layton, but I think you executed this idea better, as there are fewer restrictions in tea making. It makes it feel more natural than "create the right recipe for given requirements" puzzle.
One thing I have to point out is that the difficulty is absolutely brutal in the beginning. I had no idea what I was doing for some time. The notes help a lot though. I also appreciate free brewing mode very much (I jumped into it right after I finished), but I actually tried all the recipes in "story" mode before that, so it would be lovely to have a chance to experiment earlier.
