When creating custom airports, you can set custom aircraft types. It says the following: "only needed when using unknown custom types in the airlinelists above, or to override default type properties"

Is there a list or document containing all the default values and aircraft types? I am currently having to guess and check which aircraft are implemented by default and which I need to implement.

In the latest version, the game shows a message (just after loading the airport; at the top of the screen) if there are undefined plane types in the airlinelist(s).
