I feel the lack of being able to choose where to place the castle, or better yet, wheter to have it or not; which seems to be a constant of all maps no matter which settings you use. 

Uncheck the "Random" checkbox in the "Generate" window. If you don't need a castle, uncheck the "Citadel" checkbox there.
