Hi! So I am just getting into streaming and trying out Vtuber Kit for the first time and the instructions said to use "Game Capture" as a new source. After doing that though I seem unable to capture any other "game capture" source even when creating a second "game capture" in OBS. Not sure if this is a Vtuber Kit issue or just my unfamiliarity with OBS. Thank you!

Hmm you should be able to, this is how I use vtuber kit personally. But as an alternative, you could try using Spout capture. It's in the setting (gear) menu, if you scroll down a bit and has instructions there
