Itch appand games already installed

I have downloaded the Itch application. To use it, I have to re-download applications that are already running on my computer.

Does it mean that I can erase the apps already on my drive?

If I do that, shall I lose what I have already made in them?

Do the app on my computer and the one in Itch app use the same files folders?
