You can dodge past the monster if he is on your way but yeah, it can be frustrating if it's on the exit.
To escape the grab does drain your stamina but it does not require you to have stamina, i thought it would be too punishing that way.

The extinguisher is supposed to stun the Monster but the range of the grab is quite long so the Monster often ends up just grabbing you and ignoring the stun entirely, lack of enough playtesting unfortunately.

Also, no chase music does bother me as well, lack of time to tinker with that.

Cool idea! The game crashed on me a few times, but i liked how the lightning changes the deeper you go.
