I don't know in which step you have trouble with Gabriel's Quest so I'll list here step by step:

You took the wrong last step there. You should've chose Charlotte's Route when she asked about something between you and Anna on the Yacht on Monday.
Charlotte is Anna's best friend so she won't take anything that belongs to her ( Anna Route ). But if you say nothing happen between you and Anna, then she wants to have you for herself ( Charlotte Route ).
That's why it's called Harem End since Charlotte and Anna will argue, wanting to have you for each of themselves and you decide to have them both instead.
Like I said earlier, as long as you can still play the game and complete the quests until the end even though some of those quests are still not considered complete in the Journal, it's okay. It's an already known bug since earlier versions of the game.
As for Samantha keeps asking you to visit her house even after you already shared her with Ken, it is her repeatable dialogue.
As for Gabriel, as long as you already completed his requests until you had a threesome with him and his wife, then his quest is complete.
As for Charlotte, I don't know how you got stuck with her quest so I'll list the step by step below:
Have you tried playing without the mod? If it's just quest progression got stuck but you still can go through the story until the end, I think it's no big deal.

The sure winning team that I used all the time would be you HAVE TO pick the Defender Role ( Green Robe Character ) and Alice. While Sam and Celeste are just for 2 eye candies. 馃榿
Alice has Passive Skill which lets you roll additional D4 damage dices in the beginning of every turn based on number of mana you have. For example if you have 4 mana ( blue dots ), then there will be 4 red dices rolling FOR FREE in the beginning of every turn.
As for Sam and Celeste, you have to pick Total Mana Upgrade that will increase your total mana to at least 5 dots. Only then Sam and Celeste Passive Skill will be activated.
Now let's talk about the upgrade. Upgrade that you should be targeting are D8, D4, Total Mana, Mana Regen and Ring Upgrades.
Between Total Mana and Mana Regen, the latter I personally think is the better one since you don't have to save any mana for your next attack.
Between D8, D4 and Ring Upgrade, always go for the Ring if you see it in the options because it upgrade all your dices regardless of colors.
Now for strategies. Pick your ultimate skill at every beginning of turn and just spam your own skill as much as how much mana you regen. For example, if you have 4 total mana and 3 mana regen, then use your own ultimate ( orange dot ) and spam your own skill next to it 3 times. Your skill rolls 3 colors of dices at once so you'll get damage, heal and shield at the same time. This is why you should always go for the Ring Upgrade, but if you don't see it anywhere then choose any upgrade in the options based on my recommendation above.
You don't have think about the flow or sequence between these upgrades. Just think about what you need most at the time and that is it for the strategies. Since you got Alice in your party, you'll get free 4 damage rolls every time. Don't worry about the small numbers in the beginning. Once you progress and get upgrades, you'll see your damage will go up to 200-250, heals 100-150 as well as shields 80-100.
Because you pick the Defender Role and Alice is in the party, you'll see Sam and Celeste Passive Skills doesn't really matter to be honest. So you can change them to whoever you like 馃榿

First of all, Sofia also has 2 Routes > Love or Slut.
After helping Mario with all of his Resume Minigame, go to the Mall straight away and you'll meet Sofia, asking you on a "date" at the Gas Station. Go there immediately and she'll reveal herself as a Cop, who has been trying to bring Mario down. Since you're already regarded as Mario's helper, she'll ask you to help her collecting evidences on Mario's crimes. Accept her request and you'll be given 2 choices to collect the evidences:
1. Getting the evidence yourself / Love Route ( You'll get a recorder from Sofia and just ask bunch of questions to Mario in his Office )
2. Get Sofia inside Mario's Villa / Slut Route ( This will trigger Sofia Mario Sharing Route and a must to unlock her Slut Route )
If you choose Getting the evidence yourself:
1. Go to Mario's Villa and ask bunch of questions to him in his Office
2. Go back to the Gas Station on Friday to meet Sofia, hand her the recorder and arrest Mario immediately.
3. Go to the Gas Station and you'll get a scene with Sofia
4. Go to the Bar at the Downtown Area ( I forgot on what day ) to meet Sofia there and you'll get invited to her House
5. Go to Sofia's House at the Seaside Area to have a chat with Sofia. Do this 3 times ( once a day ) until you find a memo on her table
6. ( Make sure you already have either Athlete or Living Weapon Trait activated first ) Go to the Evergreen Area and you'll find a new pathway called Shack has been unlocked. Go to the Shack and you'll find it being protected with 2 of Mario's Goons
7. Proceed on defeating Mario's Goons and go inside the Shack. There you'll find Sofia being held hostage by Mario who has escaped from jail and wanting to kill her. You can choose to either Knock Him Down or Kill Him instead in order to free Sofia
8. Go back to Sofia's House and you'll get more scenes with Sofia ( Love Route Completed )
If you choose Get Sofia inside Mario's Villa:
1. Go to the Gas Station on Friday and tell Sofia that you're ready to get her inside Mario's Villa
2. Go to Mario's Villa and straight to the Lounge to trigger the Sofia Mario Sharing Route
3. Sofia then will excuse herself to "go to the restroom" and trigger the threesome scene again when she come back
4. Go back to the Gas Station to speak to Sofia and tell her to not arrest Mario just yet
5. ( Make sure you already completed Emma Mario Sharing Route first ) Go back to Mario's Villa and straight to his Office to tell him that Sofia is a Cop. Mario will give some money for your loyalty and wait until tomorrow
6. Go speak to Mario again the next day and you'll be given the Guest Room Key, saying there is a surprise waiting for you there
7. Go to the Guest Room and you'll find Sofia, already being corrupted by Mario, waiting for you as her Master ( Slut Route Completed )
P.S. You can still choose to arrest Mario and proceed with the Love Route even after you did the Sofia Mario Sharing Route.
P.S. I believe there is a connection between having successfully corrupting Emma first before proceeding with Sofia Slut Route. This is because there was someone saying that even though he already snitched to Mario about Sofia and he has not completely corrupted Emma just yet at that point, he didn't get the Guest Room unlocked as the result.
