Currently, I'm paying for individual pieces. The pixel art images were made by my head wiki admin/discord moderator. You can actually look at all the commissioned images that exist so far by going to the credits. The issue with your idea is that I do not know any artists who are of good enough quality to do that currently, nor do I have the funds to pay for that all at once right now either.

The main way to obtain the sunfish trait is via buying it in the aquarium.
There's a variety of ways to make money. Lower end jobs are more just for when you start the game. I recommend exploring more and checking jobs with higher stat requirements, or trading for a better job to start. Alternatively fishing ramps up pretty quickly.
Also when you start the game the apartment is the most affordable option. The houses are more mid-late game options.
To be honest, I forgot how half the stuff I implement works lmao. Also, the wiki editors have been a bit busy with things of life lately. Additionally, the Head Admin for the page is the one making pixel art for the game (other than the fishing ones). I won't stop them from doing what they want to do to help with the game. Especially since they're doing it all for free.
Now if it was me doing the explaining, I am horrible at explanations nor do I have the time to do the wiki. I usually just dump information docs on them here and there which they've been slowly going through. The only times they do something specific is when I request it.
One more thing to note, I do not have a road map. Which, ironically, is how I've stayed motivated to work on the game. I just add what I want when I want. Frequently, when I see a suggestion or idea I like, I've made a full update around it. Even with the most recent update, I commissioned an artist to make me something for one of the tf traits, and they made a maid scene. Hence, I decided to make a maid cafe.
Also I'm still looking for more wiki editors.
