the point i was trying to go for was like a trial and error type thing. like, you explore,  do some stuff, run out of stamina, reevaluate your steps, then try again, however, i can see where you're coming from.

it's probably an issue with your browser. my composer had the same issue but he switched to safari and it worked

From what I understand, the scientist put the virus in the snacks at the snack bar and gave it to his colleagues, infecting them with the virus. however, considering how the creatures are sea-animal/human hybrids, they were probably severely weaker than their full sea-animal counterpart. also, they're quite literally "fish out of water."

Fixed. You can also just press the green flag at the top to go to the menu without resetting the achievements.
