Everything you say about Matthieu is irrevocably true, and says quite a lot about his character: I explained it a bit better in my devlogs, but he does have both a narcissistic wound and a tendency to self-loathing, and all his actions are framed by these two things about him. He loves Chloé because she reminds him of himself to some extent: if he loves Chloé, and Chloé loves him, doesn't that mean he can love himself? But at  the same time, he knows what he is doing is wrong, which only leads him to developping further self-hatred. So when Chloé sets her boundaries for once, as she does in the ending you mention, he crumples because of his narcissistic wound: he isn't disappointed in love, he is hurt in his ego, only left with the hate he has for his own person and the weight of his own action, hence this final talk. I'm glad you felt mad for her in this scene because I also wanted Chloé to finally lash out, to finally be allowed to be mad at him for what he did to her.
