Instead of adding all these alternative keyboard controls, it would be even better to just actually add a proper options menu and add key rebinding.

Of course it would! But something big like that would work better for the final game. Not only because of the amount of work that would be required, but also because of the complexity of changing how the game controls thanks to the plugins I use for gamepad controls. It is something I'm taking into account, but it is not something I planned to do for the demo itself.
