AI means many things, but the game already has AI during the minigames.
If you want an AI where you can talk to the characters organically, I've tried recreating them in character.ai website! It is kind of fun but it didn't do a great job copying their personalities -- and it doesn't understand the nuances of the game, so it often talks about weird Pokemon stuff like their trainers or how cramped it is in their pokeball.
