Your plans sound good and devlog videos or a stream might well be very interesting.
But you sound undecided? It seems to me it depends on whether it would be something that you can enjoy and that kind of helps you relax or dream, too, rather than it becoming another point on a large schedule that gives you stress. If the latter was the case, maybe find a way first that gives you more opportunity to enjoy it?
