Like stated in the rules section: Only *.gb (Game Boy) and *.gbc (Game Boy Color) files are accepted. If you want to try making a your first Game Boy game, GB Studio (visual coding) or GBDK-2020 (c coding) are recommended for beginners.

If you will have a .gb file before the jam ends it's fine. Otherwise it isn't. It's up to you how you want to do it. But keep in mind, it is only 7 days.
