So I don't know if there is a youtube tutorial or anything but here are some screenshots to go along with the google doc above!
This is how you find the game data:
And here a easy way to add a colour your want is to make a new palette and then copy that colour into the first palette (and you need to add another colour to the second palette if you aren't deleting it so both have the same number of colours!) The numbering is 0, 1, 2, 3 and so on:
And here you find the tile, sprite or item you want to change the colour of and add the corresponding colour number:
