Destroy the first projectile and jump on the platform or just stay on the ropes and time you attack well to destroy projectile and hit it when it's near the edge.
It's pretty difficult but what lag said, I've found that destroying the projectiles and waiting for the skeleton to get close enough to hit it is a bit easier than trying to jump on the platform though
